  • Whole Mustard Seeds: burst with pungent heat and a floral, mustardy aroma.

  • Salt: harmonises all flavours while acting as a natural preservative.

  • Sun-dried, roasted and stone-ground spices:

  • Red Chillies: add a smoky, lingering warmth.

  • Fenugreek Seeds: lend a subtle bitterness and depth.

  • Turmeric: provides earthy undertones and a golden hue.

  • Preservative (INS 211): extends shelf life without compromising freshness.

Mamidi Avakaya has been a staple in Andhra kitchens for centuries. Traditionally prepared during peak mango season, it was a way to preserve the bounty of summer. The recipe—passed down through generations—was often guarded like a family heirloom, with each household adding its own subtle twist.

  • “Avakaya” comes from “Ava” (mustard) and “Kaya” (raw fruit) in Telugu.
  • It’s so iconic in Andhra cuisine that it’s often called the King of Pickles.”
  • In many Telugu households, summer isn’t complete without the annual ritual of making Avakaya—often treated with the same reverence as winemaking in France.
  • Flavour: Pungent mustard meets tangy mango with a spicy crescendo.
  • Taste: A bold interplay of sour, spicy, and umami with a lingering heat.
  • Texture: Chunky mango pieces with a grainy, spice-laden oil base that coats the palate.
  • Rich in Antioxidants: Mustard seeds and turmeric help fight inflammation.
  • Digestive Support: Asafoetida and fenugreek aid gut health.
  • Vitamin C Boost: Raw mangoes support immunity and iron absorption.
  • Natural Probiotics: Traditional pickling methods promote gut flora (when unpasteurized).
  • Mix with hot rice and ghee for a soul-satisfying Andhra staple.
  • Serve as a side with curd rice, pongal, or khichdi.
  • Spread on rotis, parathas, or even sourdough toast for a tangy punch.
  • Add to cheese boards or mezze platters for a spicy Indian twist.
  • Avakaya Aioli: Blend with mayo or Greek yogurt for a spicy dip.
  • Pickle Fried Rice: Toss with leftover rice, onions, and curry leaves.
  • Avakaya Pasta: Stir into penne with sautéed garlic and cherry tomatoes.
  • Pickle-Stuffed Paratha: Mix into dough or use as a filling with paneer.
  • Avakaya Tofu Stir-Fry: Add to pan-fried tofu and bell peppers for a fiery glaze.

Trsna’s Mango Mustard Pickle is made using 65% raw mango pieces, sesame oil, and a heritage spice blend that’s sundried, roasted, and stone-ground for flavour intensity. We prepare it during peak mango season, in small batches, at source. Unlike commercial shortcuts, we stick to heirloom recipes and never replace traditional ingredients, especially the oil that defines its authenticity. There are no gimmicks—just soulful, honest craft.

  1. Is the pickle spicy?

Yes, expect bold South Indian heat! Our Avakaya delivers a hearty punch through red chillies and whole mustard seeds, balanced with turmeric and fenugreek for warmth and complexity. It’s fiery but flavourful.

  1. How should I store the pickle after opening?

After each use, wipe the jar rim clean, seal it tightly, and refrigerate. Always use a clean, dry spoon to prevent moisture or contamination, ensuring the pickle stays vibrant and safe.

  1. How long does the pickle stay fresh?

Unopened, it remains at peak flavour for 12 months. Once opened and properly stored in the refrigerator, it stays delicious and safe to eat for 6–8 months.

  1. Are there any additives or preservatives used?

  1. Is the pickle vegan and gluten-free?

Absolutely. Mamidi Avakaya is 100% vegan and naturally gluten-free. It contains no dairy, grains, or animal-based ingredients.

  1. Can I use it in cooking or only as a condiment?

Both! Stir into vegetable stir-fries, grain bowls, or curd rice for a burst of tang and spice. It’s also a stellar side with dosas, rotis, or even sandwiched into grilled cheese for fusion flair.

  1. Where is the pickle made?

Trsna’s Mamidi Avakaya is handcrafted in coastal Andhra Pradesh, using fresh seasonal mangoes and locally sourced spices. Every jar reflects the bold spirit of its region of origin.
