During the mango season in Kerala, raw succulent mangoes are selected for sun drying. These are then sliced and laid out in the open to dry under the sun naturally. Trsna’s Unakka Maanga Achaar is made from these sundried mangoes, aromatic spices and herbs. This pickle's taste is completely different from the regular mango pickles and it is generally relished with Curd Rice, Sambhar Rice, Dosa, Appam or Malabari Paratha.
